Mince Pie Protein Porridge

A festive favourite added to warming porridge to create the ultimate Christmas breakfast bowl. Rich in flavour with an extra boost of protein.
Method

Place all your topping ingredients (except the dairy free yoghurt) in a small bowl and leave to soak for at least an hour, but ideally overnight. This gives the dried fruit the chance to soak up the sweet, spiced liquid.

Pre-soak your oats in a pan with 100ml of boiling water for 10 minutes (this helps make them nice and creamy and cooks down on the cooking time).

Add to the pan the rest of the porridge ingredients and stir on a medium heat until thick and creamy (approx. 3 - 4 minutes).

To serve, place the oats in your favourite bowl, top with the dairy free yoghurt and the soaked spiced dried fruit.
